Homemade Mayonnaise

In a recent post, I mentioned how easy it is to make mayonnaise at home. Unfortunately, since I’ve only made it once when I was a kid, I didn’t really feel I could back that comment up. Plus, Laura and I needed some mayonnaise that was sure to be made with organic, natural eggs, and didn’t cost a fortune. So I decided to make some yesterday. Guess what? It really is easy to make it at home. It’s surprisingly fast, and I did it by hand with a whisk. The next time I make it, I will definitely use a food processor or blender. Mayonnaise ingredients: 1 C oil, 2 eggs, Dijon mustard, lemon juice, salt and pepper
