Crisp Summer Salad

Fig and prosciutto saladAlthough this salad is a common combination of ingredients, the idea for it just came to me one day. It was probably influenced by things I’d read or watched (I love the Food Network), but we never consulted a recipe to make these salads. They were, however, delicious and refreshing! There’s no cooking involved, so the recipe is very simple (and, again, approximate):

  • 8 figs, quartered
  • 4 thin slices of prosciutto, shredded into pieces about the size of the arugula leaves
  • 1 cup arugula leaves (not packed)
  • 1 bag mixed field greens
  • 1/4 cup sliced almonds
  • 1/4 cup Craisins
  • Goat cheese (or another creamy cheese)
  • Sweet vinaigrette (this could be strawberry, raspberry, citrus, balsamic… just don’t use anything too strong, like garlic)

Divide all ingredients into four portions, arrange attractively on four plates, and serve. Voila! Serves four.
