My Mother pointed out an article in the Orlando Sentinel yesterday about Lime Fresh Mexican Grill. It is a restaurant with 9 locations, mostly in south Florida, but one opening up the end of this week over in Dr. Phillips area. Why it’s so cool is that they are the first restaurant to be certified humane by Humane Farm Animal Care (HFAC).

HFAC is a non-profit group set on enforcing their rigorous standards of humane care. The Certified Humane label means that “animals from birth to slaughter be fed a nutritious diet without antibiotics or hormones, and are raised with shelter, resting areas, sufficient space and the ability to engage in natural behaviors (i.e. chickens can dust-bathe, pigs can root, cows can graze etc.). The extensive and ongoing certification process, which will be repeated annually at each Lime location, includes the auditing and inspection of all procedures, facilities, receipts and sales records.”

From the website I would say Lime looks a bit like Chipotle (one of this blogs fave restaurants), and although I don’t know, my guess is you order at the counter at Lime as well. Turns out after some research Lime, as a company, is still headed by the original guy who started them, John Kunkel, however they are owned by Ruby Tuesday. Since this big chain is funding the process, there is plans to expand to the rest of the east coast within the next couple years.

The restaurant here in Orlando doesn’t actually open for a few more days, so I can’t really tell you much about the food or atmosphere, but expect an update when we do make it out to try it.

We are the only restaurant chain in the world to make a commitment to only serve 100% humanly raised meats. For Chipotle it is a great ad campaign for us it a commitment to doing whats right 100% of the time not as Chipotle put it “whenever possible”.
