The Proof is in the Meat

The Proof is in the Meat

While reading Farm City by Novella Carpenter, I actually learned quite a bit about raising pigs. Believe it or not, the author raised two pigs in the heart of downtown Oakland, California. I’m not suggesting I would try to do the same (not in the city), but it was interesting all the same. One point that struck me was that, after talking to some people about raising pigs, she found that if she fed her pigs a lot of peaches near the end of their lives, the meat would taste sweeter. (Likewise, she worried that if she fed them fish, the meat might have a fishy flavor.) It just reinforces the fact that animals turn food into muscle and fat, so the meat you’re eating really does contain whatever the animal was eating. THAT is why you want your meat to be antibiotic-free and hormone-free, even if you don’t care about the animals happiness.
