Almost Meatless

Almost Meatless

Aug 28

Book Review While perusing at my local library I stumbled across a cookook called, Almost Meatless: Recipes That Are Better for Your Health and the Planet by Joy Manning and Tara Desmond. I took it home and dove right in. The preface is exactly what I was hoping! The two authors talk about how the American diet is way overloaded with meat, and that we don’t need to eat that much of it....

Crisp Summer Salad

Crisp Summer Salad

Aug 27

Although this salad is a common combination of ingredients, the idea for it just came to me one day. It was probably influenced by things I’d read or watched (I love the Food Network), but we never consulted a recipe to make these salads. They were, however, delicious and refreshing! There’s no cooking involved, so the recipe is very simple (and, again, approximate): 8 figs,...

Chinese Fried Rice

Chinese Fried Rice

Aug 16

One of the best dinners we've had at home recently is Chinese Fried Rice. I call it Chinese mostly for sentimental reasons, to acknowledge the influence of that cuisine, but what we made was far from traditional. I didn't keep very good track of amounts as I cooked, so they are all approximate, but I can offer a general recipe for a good and filling one-pot vegetarian dish. Click 'read more' for the full recipe. Pictures to come...

Homemade Mayonnaise

Homemade Mayonnaise

Aug 08

I decided to make some mayonnaise yesterday. Guess what? It really is easy to make it at home. It's surprisingly fast, and I did it by hand with a whisk. The next time I make it, I will definitely use a food processor or blender. Click 'read more' to see photos of the process.

Day 3

Day 3

Aug 03

We still have quite a few items in our fridge that we weren't been able to use up before our three months started. This makes me feel like we haven't changed much, though I know the effects will kick in more in a week or so. Laura thinks we should use up the items in the fridge that are not "safe," but I have a hard time looking at the mayonnaise and butter and NOT thinking about what soulless factory produced it. Today, I had my first ham sandwich with Applegate's Black Forest Ham. It tastes a lot fresher and meatier than Boar's Head.

Risotto alle Fragole

Risotto alle Fragole

Jul 25

Tonight we got together with John’s sister and her two friends from Italy, Fabio and Adrian. Adrian is an amazing cook and tonight he made Strawberry Risotto (Yes, I know, weird but delicious!) and the best part it easily fits within our diet (and the lack of meat makes it cheaper!) So here it is for serving about 6 people for a good portion: Risotto Alle Fragole Adiran...
